Mother’s Day

April 29, 2009Here in DC, the weather has definitely turned to spring. That makes me think about lovely spring foods that make eating something special.
Steamed fresh asparagus, dressed with orange juice, white wine vinegar, oil, salt, pepper, and some orange zest is a fabulous first course.
Pasta mixed with fresh veggies sauteed with garlic in olive oil and topped with parmesan is fast and yummy.
Greens are one of the first things to come into season. Think big luscious salads of fresh greens and veggies. I especially love fresh (lightly steamed) green beans and freshly hulled green peas.
Depending on where you live, berries will soon be in season (or they may be available now). Not much beats fresh berries as a yummy dessert. Eat them by themselves or with some ice cream!
There you have it — a perfect springtime menu.
