Christmas Countdown – 2 Weeks
December 10, 2008Use This Time Well
December 12, 2008One of my favorite holiday treats is spiced nuts. You can do them savory or sweet, depending on what spices you use. For savory nuts, you use spices like paprika, ground red pepper, chili powder, cumin, and coriander — whatever combination you like. For sweet, you use sugar, cinnamon, nutmeg, ginger and ground cloves. Beat the spices with an egg white and some water until it gets frothy. Then fold in the nuts.
Use any mixture of nuts you like. I use walnuts, pecans, almonds and cashews because those are what I like. If you like peanuts or pistachios or hazelnuts, use them.
Toast the nuts on a greased cookie sheet at 300 for about 45 minutes. Stir them 2 or 3 times so they toast evenly. Let them cool completely before serving.
I am making the sweet nuts now and my whole house smells amazing. And they taste unbelievably good. I serve them as a snack at parties. The real challenge is not eating them all myself!
