October 6, 2010Tonight I made my first batch of soup of the season. Tonight's soup of choice was a potato and corn chowder. It comes together in under half an hour. It's healthy and filling and tasty.
For me, hearty soups and chilis are the perfect fall dinners. Add some fresh bread, a green salad, and a glass of wine and you have a meal for for a king.
Most soups also store well, so you can whip them up when you have time and freeze them until you want them.
I always keep some basics on hand — a mixture of good quality low sodium stocks, some basic herbs and other aromatics (onions, shallots), noodles or pasta. With those basics, you can make use of most leftover vegetables and meat in the soup. Just dice, toss, and heat through.
