May 27, 2010Today, I thought I'd share a new recipe I've been developing over the last week or so. I think it's one of my best culinary craetions to date. It's healthy. It's attractive. It's fast and easy. And it's yummy. Plus, it's a great option for summer picnics since it doesn't need to be refrigerated. (Plus, it's vegan.)
My friend Mary gave it its name, based on the 3 main ingredients. Here's the recipe:
Ingredients:
1/2 cup of pistachios, toasted
4 oz blueberries
1 large jicama, shredded (I used the large side of my box grater. It's easier to handle the jicama if you peel it and divide it into quarters.)
1/4 cup pomegranate juice
1/4 cup white wine vinegar
2-3 tablespoons vegetable oil
Mix together the first three ingredients in a large salad bowl. Whisk together the last three ingredients until combined. Pour the vinaigrette over the salad mix and toss.
That's it. Now you eat it. How easy is that?
*For the pomegranate juice and viengar, you can substitute an equal amount of pomegranate vinegar if you can find it.
