January 24, 2008Fruits and vegetables are your friends. Shocking, I know.
A great way to eat more healthfully is to increase your consumption of vegetables and decrease the consumption of meat, saturated fat, and simple starches (like sugar and processed white flour).
For some reason (probably years of magazine covers and cooking shows), people have gotten the sense that a proper meal is meat or fish, a starch, and a veggie — each taking up one third of the plate. It’s time to break away from the ordinary! What’s wrong with dinner being three different veggies, or a large salad topped with a small amount of cheese and some toasted nuts in a light vinaigrette, or a large bowl of vegetable stew ?
When I traveled in Vietnam, fresh fruit was a staple of breakfast every day and was dessert at virtually every other meal. I got to eat wonderful fruits I had never even seen in the regular markets back home. Things like jackfruit and pomelos and dragon fruit (Dragon fruit is the most addictive thing I have ever eaten. Unfortunately, to transport it to the U.S., they’d have to pick it too early to be really good.)
If you have an ethnic market in your area, stop by and pick a few new fruits or vegetables to try. If tyou stay in the produce section, you won’t find yourself eating bugs or fish eyes, but you just might find new foods that are healthy and delicious!
