I absolutely love the idea of serving Halloween dinner from a pumpkin!
(When you are cleaning out the pumpkin, you can keep the seeds and roast them with a bit of salt for a yummy and healthy snack!)
Keep in mind that you aren’t limited to recipe in the article. You can hollow out the pumpkin as described and fill it with whatever you’d like to serve. What kid wouldn’t love chicken pot pie, beef stew, or even pasta served from a pumpkin!
You can even dare to go beyond dinner. If you pick up several small pumpkins (think the size of a softball), you can make a special Halloween lunch that will make you the coolest parent in the school. Hollow out the pumpkin as usual and draw a jack o’lantern face with a black marker. Fill the hollowed pumpkin with tuna salad, chicken salad, or a few tablespoons of peanut buter and a bit of jam from a squeeze bottle. Replace the pumpkin top and send it to school in plastic container along with whole wheat crackers or pita wedges. You’ll be tha talk of the school cafeteria!
