October 13, 2008You may think that entertaining has to go by the wayside when economic times get tough. But that's not really the case. Inviting friends into your home for a simple meal is a lovely way to spend an evening. It's less expensive than going out and you'll have time to actually talk with each other. One thing you may have to cut back on is alcohol, but that's not the worst thing in the world
Here are three menus for 8-10 people. All can be made for under $100. And you'll likely have leftovers that make lovely lunches.
Brunch:
2 quiches (maybe spinach and cheese or broccoli and cheese)
Large green salad
Pancakes and sausages
Lunch:
Tortilla chips with salsa or guacamole
3 bean chili and/or meat chili
Jicama slaw
Apple crisp
Dinner:
Caprese salad
Lasagna
Sorbet and cookies
Simple. Lovely. Yummy. And cheap.
