April 6, 2017About a month ago, I subscribed to an awesome service called Hungry Harvest — Produce with a Purpose. It's a pretty straightforward model. They collect produce rejected by buyers because it doesn't meet aesthetic standards (scarring, wrong size, variable color, etc.) or because it was overproduced. Instead of being sent to the landfill, this rejected produce is then delivered to subscribers' homes in handy re-usable boxes. Instead of trash, it fills the tummy. All of it is perfectly edible. (Seriously, I got two grapefruit that had scarred peels. Personally, I don't eat a lot of grapefruit peel. The compost pile didn't seem even slightly offended by the scarring.)
I get an amazing variety of produce delivered for less than what I'd pay in the grocery store. And, it means that I'm eating a lot more fruits and veggies. So much so that I have to keep coming up with ways to use all of the produce. Here are a few of my favorites:
- Chop the veggies and saute in olive oil with some garlic. Toss with pasta and top with some shaved parmesan.
- Saute veggies, then toss in some whisked eggs. Top with shredded cheese (if you'd like) and hot sauce. Awesome for breakfast; tasty any time.
- Toss the fruit into a fruit salad or mix into an almond ricotta cream.
- Chop the veggies into chunks and mix with vegetable broth for quick and easy soup.
- Keep a huge bowl of salad in the fridge as a starter for every meal.
- Roast the veggies that can be roasted and mix with farro.
I find out what I'm getting 4 days before it arrives, so I can start planning ahead. My goal is to use at least two things from the box every day for lunch and dinner. So far, I'm doing pretty well at it.
