June 1, 2009This evening, I made a favorite summer supper. It's fast, easy, and tasty. It's also reasonably healthy and inexpensive.
I make a serving of whatever pasta I have on hand (though farfalle) is a special favorite. In a skillet, I heat a tablespoon of olive oil and a tablespoon of butter. When it's hot, I add minced garlic (at least one clove per serving. I like garlic, so I use two.) Then I add a diced summer squash and I saute until the garlic is browned and the squash is tender. I mix the squash with the pasta and top with some freshly grated parmesan.
It costs less than $2 a serving and takes 15 minutes. You can use yellow or green squash or even zucchini. Whatever is on sale or fresh in your garden.
Try it. You'll be amazed at how good it tastes.
