Roast vegetables.
It's easy and it requires very little hands-on time. You can roast almost any vegetable – beets, carrots, squash, tomatoes, peppers, onions, parsnips, turnips. You get the idea.
Peel, them and chop them roughly. Toss them with a bit of olive oil. Sprinkle with salt, pepper, and whatever herbs and spices you like. Roast them in a foil lined pan at 375 for anywhere from 30 to 60 minutes, until the veggies are browned and tender. While the heat makes magic, you can do other chores, read, craft, whatever.
You can eat the veggies immediately or store them in the fridge for a few days in an airtight container. They'll reheat quickly in the microwave for a tasty side dish. They can also be used as the base for stick, in soups, stews, and casseroles.
Very little effort. HUGE taste. What's not to love?
